The Quick and Healthy Comfort Meal: Broccoli and Pasta

A personal comfort food, the softened broccoli absorbs all of the rich garlic oil, while the pasta harbors small pieces of garlic for something different in every bite! This meal comes together in less than 30 minutes, and is also great as leftovers.

Broccoli and Pasta

A warm, comforting, garlickly meal
Prep Time 5 minutes

Ingredients
  

  • 1 Head of Brocoli
  • 8 oz Pasta Any shape will work, but I would recommend a hollow noodle like penne
  • 4 tbsp Olive Oil
  • 5 cloves Garlic You can also use more to make it extra garlicky!
  • Salt For the pasta water
  • Red Pepper Flakes Optional
  • Parmesan Cheese For serving, to taste

Instructions
 

  • Begin by boiling a pot of water enough to cover the broccoli, salt generously
  • Mince the cloves of garlic
  • In a second pan, add the olive oil and garlic, and set the heat to medium low
  • While waiting for the water to boil, remove the broccoli florets from the head of broccoli
  • Once boiling, add the broccoli to the pot and cook until just beginning to be softened, about 5 minutes
  • Remove the broccoli with a slotted spoon and set aside, add to the water your pasta of choice
  • Cook the pasta according to the instructions on the box
  • Drain the pasta, and add the broccoli back into the pot
  • Once your garlic is lightly browned, add the remaining oil and garlic to the pot with the broccoli and pasta
  • Stir to combine, and optionally add in red pepper flakes for an extra kick!
  • Top with some parmesan and enjoy!
